Summer Arugula and Mango Salad

This is a salad that I threw together with ingredients on hand and it turned out looking lovely and tasting delicious!

On a bed of Arugula, about 2 cups, chop up an avocado, throw in a handful of red and yellow cherry tomatoes, and one cup of mango cubed about 1/2 inch pieces. Then drizzle some good quality Extra Virgin Olive Oil, if you like it can be oil flavored with garlic.  Top it off with the chunky red onion vinaigrette, recipe below.

This serves one as a main entree or two as a side salad. It will be an excellent compliment to Tropical cuisine, Mexican and Indian cuisine as well. It is also perfect for barbecues… 

Such an amazingly refreshing and energizing salad! Another advantage it is very easy to make a large batch of this for a big buffet type gathering. Looks fabulous too!


The vinaigrette is simple, I made it the previous night so the ingredients were marinated and looked fabulous.

1/2 red onion, finely chopped
1 small jalapeno, finely chopped
Sea salt, 1/4 tsp
2 tbsp cilantro, finely chopped
Juice of 1/2 lime

Toss all the ingredients together and refrigerate overnight.
