Hearty Black Lentil Soup! with a bite…

I have just discovered black lentils and I am loving it. Here is one of the first recipes I tried with it…

Ingredients –

3 cups cooked black lentils

2 cups water

2 cups freshly blended roma tomatoes

5-6 pods garlic, finely chopped

1 cup chopped onions

1 cup chopped celery

1 cup chopped carrots

1 teaspoon cumin powder

1/2 teaspoon coriander powder

3/4 teaspoon cayenne pepper powder

2 teaspoons sea salt

2 tablespoons sunflower seed oil or olive oil

For the garnish–

1 cup chopped red onions

1 avocado sliced

3 tablespoons fresh cilantro finely chopped

Sour cream (optional)

In a heavy bottomed pan add the oil. Once the oil is warm add the garlic, chopped onions, celery and carrots, and sautee until the onions become translucent. Add the the tomato juice, water and let simmer until it comes to a boil. Add the lentils and let it boil until the soup starts simmering again.

Add the coriander powder, cumin, cayenne and boil for  about 25-30 minutes on medium heat. The soup will thicken and really come together.

Serve hot with with a couple of slices of avocadoes, chopped red onions and fresh cilantro. Optionally, add a dollop of sour cream.
