What better than this amazingly delicious, healthy, Germ-buster Gazpacho…. I personally like it the way it is shown in the picture. If you want it to be a little bit heartier, throw in a few garbanzos and chopped tomatoes.
(makes one large bowl, enough for one lunchtime serving)
8 oz freshly squeezed orange juice
2 inch piece fresh ginger (I used the young pink ginger, which has practically no fiber)
2 inch piece fresh turmeric (or substitute with 1/2 tsp turmeric powder)
20 leaves fresh mint
1 tbsp roasted pumpkin seeds
1/4 tsp sea salt
2 teaspoons olive oil infused with cayenne and garlic
A couple of mint leaves for garnish
1. Blend the first four ingredients on this list till smooth
2. Add the skinned and deseeded avocados, sea salt and pulse till it is coarsely mixed in.
3. Pour into a bowl and garnish with roasted pumpkin seeds, olive oil and torn up mint leaves.
