Another lettuce recipe which they will wipe out, and you don’t even have to tell them it’s made with lettuce! Really… If your family is like mine and don’t get very excited about this vegetable, here is what you can do!
So I whipped up a lassi based on a recipe I had written up for the Washington Post last summer, only this time I added iceberg lettuce to it. And it was utterly divine…
Such a refreshing and healthy drink, you really don’t need to tell them it had lettuce in it. Just relish the fact that you did something wonderful for your family and friends….
Here is the recipe…
Spicy (Lettuce) Lassi
(If they ask why it is green tell them it is a mint lassi! You are not lying this really has mint leaves in it, right? Just don’t tell them about the other leaves… wink, wink!)
Serves 4 (approximately 8oz each)
1/2 head iceberg lettuce washed well and roughly chopped
1 – 1/2 cups cold water
1 cup yoghurt (I used full fat home made, can be substituted with non-fat and/or store bought)
Juice of 2 limes
1 1/2 inch piece of fresh ginger
1/2 teaspoon cumin powder
1 thin slice jalapeno
15 leaves of fresh mint
1/2 tsp salt
Add everything but the yoghurt to a blender and grind till it is smooth. Finally add the yoghurt and blend till frothy, about 2-3 minutes. Serve with ice and garnish with a slice of lime. Enjoy!
