Kale Mango Smoothy, With a Kick

What can I substitute for a lunch plate on a busy and steaming hot summer day? A Kale Mango Smoothy does it for me. I also sometimes serve this up as a Gazpacho in a bowl, with a chickpea salad (recipe coming soon).

This is probably one of the easiest smoothies to make. And what is even better, it sits well in the refrigerator for a couple of days.

 

Recipe —

Yields 2 16 oz glasses

1 cup Kale roughly chopped packed
1 cup fresh mango peeled and chopped
1 inch piece ginger
10 fresh mint leaves
2 cups orange juice
Juice of 1 lime

Blend all the ingredients till smooth
